Stage Etiquette
When you come up on stage to speak, do not speak over the panelist(s) if at all possible. Individuals speaking over panelists when they are invited on stage may be kicked from the stage if they do not 1. either mute or leave the stage after they have said their piece or 2. speak over other speakers and panelists. Disruptive individuals will be confronted if they become a disturbance to the audience or panelists. These rules are in place to prevent others being unfair to other speakers or panelists. Before you come up on stage to speak if the panelist(s) want to have community discussion, please read this over.

Speaking about chicken, I'll mention that the color of the meat isn't a good indicator of whether it's fully cooked! Young chickens that are sold here in the US often have blood vessels and soft, slightly red-hued bones that will continue to look undercooked, even if they're cooked properly
I once worked with Isomalt instead of sugar for caramel. Isomalt doesn't get brown, but otherwise behaves very similar. Only that it's not good to eat too much of it bc it creates stomach problems.
Recipes:
Kiera Ember's Family Chili
1 1/2 pounds lean ground beef
1 onion, chopped
1 14oz can tomato sauce
1 14oz can diced tomatoes
2 16oz cans kidney beans
Celery salt, to taste
Chili powder, to taste (1 - 2 Tablespoons)
Salt & pepper, to taste
1 pinch sugar
Brown the ground beef with the chopped onion. Add the tomato sauce, tomatoes, kidney beans, celery salt, chili powder, salt and pepper. Cover and bring to a boil over moderately high heat. Reduce heat to a simmer and let cook for at least 30 minutes. Put in a pinch of sugar if desired as it is cooking. Serves 6.
Seafood Foil Packets
Adapted from Japanese Cooking: A Simple Art by Shizuo Tsuji
“Mixed Grill in Foil” (foiru-yaki/ホイル焼)

1 pound white-fleshed fish filets (I’ve used cod in the presentation)
1 pound raw shrimp
8 mushrooms (shiitake or portabella)
3 – 4 Tablespoons butter
1 lemon
2 Tablespoons sake
Salt
Green onion for garnish
Preheat oven to 475°F/250°C.
Remove tails and shells from shrimp. Boil in lightly salted water until just pink, then drain and cool. Brush mushrooms clean, then cut into ¼-inch thick slices. Thinly slice lemon and green onion.
Butter centers of 4 ~12-inch squares of foil. In center of each foil square, place ¼ of fish, shrimp, and mushrooms. Top with lemon slices, butter, and green onion. Sprinkle with sake and a dash of salt.
Bake for 15 minutes or until fish is flaky. Serve over rice or pasta, and top with additional green onion if desired. Serves 4.

Over on Tumblr there was a recent post (well, as of mid-2019) by @necrophagist about more authentic ways to satisfy ‘kin cravings, particularly meat-related ones. Considering my kintype is an obligate carnivore, I think a lot about meat. Specifically rare muscle meat and organ meat.

Deep fried tofu - chewy & hearty texture that doesn't feel like classic tofu
Mock duck (a.k.a. wheat gluten) - available at Asian food stores and is chewy like meat
"Meaty" mushrooms like chicken-of-the-woods
